Considerato uno dei pano
rami più belli al mondo con tutta la Valdichiana,
il Lago Trasimeno in Umbria, le Marche e nelle giornat

limpide lo sguardo spazia fino alle cime innevate del Gran
Sasso d'Italia in Abruzzo.
Ristorante: Con i suoi muri
in pietra sapientemente restaurati, così come gli ar
chi a mattoni ed il caminetto, con le ampie fine
stre che si affacci
ano sulla Valdichiana e l'arredamento in stile, il loca
le ristorante offre un'atmosfera di intima ricercatezza
.
È qui che si possono gustare le autentic
he specialità toscane, ed in particolare di quella par
te di regione compresa tra la Val d'Orcia e la Valdichiana, c
on una sapiente miscela di odori e sapori antichi; e com
e potrebbe essere altrimenti dato che lo Chef di cucina e pr
oprie
tario Paolo Masini, discende direttamente da una dinastia di
cuochi di alta cucina (un nonno era cuoco reale a Napol
i).
E non solo, esso vanta una trentennale esperienza m
aturata nel settore della ristorazione e dell'accoglienza.
Ovviamente per gli ospiti vengono selezionate con cur
a solo materie prime di ottima qualità quali quelle o
fferte dal territorio circostante: l'olio extravergine di
oliva delle colline senesi
,
la carne di razza chianina, i salumi...
Il tutto acco
mpagnato da una attenta selezione di grandi vini di Toscana.
Cenni Storici: LA COSTA era l'antica fattoria del paese
e ne era stato proprietario il marchese Scipione B
argagli, Ministro sotto il Granduca di Toscana Pietro L
eopoldo II, come attestato da numerosi documenti conservati
dall'attuale proprietà.
La Fattoria svolgev
a un ruolo primario di selezione e conservazione dei prodotti
dei vari "poderi", appezzamenti di terreno con ca
sa annessa e condotti da una famiglia di "mezzadri&qu
ot; (forma tradizionale in Toscana di condurre un podere:
metà raccolto al padrone e metà al contadino),
ben 30 nel XVIII sec., sotto la sorveglia

za di un "Fattore" (uomo di fiducia del feudatario-
proprietario), oltre ad offrire lavoro come operai agricol
i e, nel caso, protezione agli abitanti di Montefollonico. <

/font>: Il Paese (575 m. s.l.m.) è
un piccolo borgo medievale che trova la sua ragione d'esser
e nella passata rivalità tra le repubbliche di Sien
a e Firenze; infatti il paese nacque come rocca forti
ficata senese, contrapposta al "fiorentino&quo
t; Montepulciano. Le prime notizie sul popolamento della z
ona risalgono addirittura agli uomini di Neanderthal (60.00
0 anni fa circa) con gli utensili litili rinvenuti in locali
tà "Il Tondo" (attualmente parco pubblico).
Nel corso dei secoli poi, abbiamo notizie di una disputa te
rritoriale nell'anno 715 per il possesso della Pieve di Sa
n Valentino. Il paese come tale iniziò l
a sua storia nel XIII secolo con la fondazione della Pieve
di S. Leonardo da
parte dei Monaci Cistercensi del vicino monastero

STA is Located in the small medieval village of Montef
ollonico between Pienza and Montepulciano and is an oasis o
f peace and refined gastronomy.
The building dates backs to 1300, today “Historic
al Residence”, title given by the Tuscan Region
to the historical building registered by the Belle Arti (Na
tional Body for the Protection of the Historical-Artistic Her
itage) .
LA COSTA was the ancient town farm, nowadays is
a charming Hotel Restaurant, that was restored leaving i
ts ancient characteristics unchanged, paying great attention
to every details

Panoramic View: A breathtaking
view, unique, incomparable and not to be found anywhere els
e, can be admired from the great Terra
ce of 400m² and from the rooms overlooking the
garden.
It is considered one of the most beauti
ful panoramas in the world with vista of all the Valdichia
na, Lake Trasimeno in Umbria, the Marches and, when days are
particularly clear, your gaze can reach the
snowy peaks of the Italian Gran Sasso in Abruzzo.
Restaurant:
With its expertly restored stone walls as well as t
he brick arches and the fireplace, with the large windo
ws looking over the Valdichiana and the stylish
furniture, the restaurant offers an intimate and refined a
tmosphere.
It is here that the authentic Tuscan special
ities can be tasted, and in particular those from the par
t of the region between Val d'Orcia and the Valdichiana, with
carefully blended ancient fragrances and flavours; and it
couldn't be otherwise given that the chef and owner Paolo
Masini is a direct descendant of a dynasty of haute
cuisine chefs (a grandfather was once a royal chef in N
aples).
And not only this, he can boast almost thirt
y years of experience in the sector of restoration and ho
spitality.
Obviously only materials of the highest qua
lity are carefully chosen for the guests from th
e surrounding area: Sienese extra-virgin olive oil, Vin
o Nobile di Montepulciano and Brunello di Montalcino wine,
Pienza sheep's cheese, white and black truffle depending
on the season, top quality Chianina beef
considered amongst the best meats in the world, salami...

Historical Notes: LA COSTA was the old village farm and was
owned by the Marquis Scipione Bargagli, the Prime Minist
er under the Tuscan Grand Duchy Pietro Leopoldo
II, as attested in numerous documents preserved by the prese
nt owners.
The farm played a primary role in selecting
and preserving the products of the various "estates&
quot;, plots of land with a house alongside and run by a fa
mily of "share croppers" (the traditional Tusca
n manner of running an estate: half the harvest to the
owner and half to the worker), there being as many as 30 i
n the XVIIIth century, under the surveillance of a "bai
liff" (a man trusted by the feudal lord-o
wner) as well as offerin
g
work for farm workers and, if needed, protecti
on for the inhabitants of Montefollonico.
Montefollonico: Mont
efollonico (576m above sea level) is a small medieval vill
age whose raison d'être is found in the pas
t rivalries between the republics of Siena and Florence; in
fact the village was born as a Sienese fortress, against th
e "Florentine" Montepulciano. The first evidence
of the area being inhabited dates as far back the Neande
rthal man (approx. 60,000 years ago) with the Lithic to
ols found in the area of "Il Tondo" (now the pu
blic garden). In the following centuries we have accounts of
a territorial dispute in the year 715 for the ownership
of the church Pieve di San Valentino. The history of the
village as such began in the XIIIth century with the fo
undation of the church Pieve di S. Leonardo by the Cisterc
ian monks from the monastery nearby, who by dedicating them
selves to fulling wool gave the village
